Course Overview
Can you remember a time when your grandmother insisted that apple sauce was always served with pork, roast potatoes were always served with roast lamb, and apple pie was always served with lashings of cream and ice cream?
For some, these traditions are still being passed down from one generation to the next. However, each new generation develops new foods and trends. We now have a very extensive range of cuisines due to our cultural diversity. And the amount of choices and food and beverage combinations continues to increase.
As a result, you must continually source and update knowledge in the food and beverage industry and keep in touch with the ever-changing needs of customers.
People’s tastes are all different and no one should question customers’ beverage and food combinations. However, to offer informed advice to customers, you need a basic knowledge of how food and alcohol are best combined to enhance the flavours and textures of each.
The content of this course focuses on how to design a modern menu, and how to match alcoholic beverages with the food on your menu. You will learn about the various types of food service styles and their history, menu structure and style, food types, meat and vegetables, market trends, food intolerances and culinary terms. You will also learn about wine, matching food with wine, grape varieties and wine production, beer styles and fermentation, and spirits & liqueurs.
What type of certificate will I receive?
Graduates of our Short Courses will at the conclusion of their program receive a Certificate of Completion. You could use this Certificate to prove to a potential or current employer that you have successfully participated in an online training course, offered by an RTO.
Australian students: If you require a Statement of Attainment certificate for employment in your industry, or for use in a Higher AQF Qualification, you will need to enrol in an ‘accredited’ Nationally Recognised Training unit.

How do I print my Certificate?
To protect the integrity of your Certificate, it will be protected by a unique ID number allocated only to you. This number is recorded against your Profile, and if you choose to upload a Photo of yourself into your Profile, it will protect your certificate from duplication and fraudulent use.
Course Outline
This course has 2 chapters, in which you will learn how to:
Research general information on food and beverage
Share information with customers.
You will progress at your own speed, page-by-page through the course listening, reading and watching the training material. Along the way you will be invited to participate in a range of self-tests and interactive, problem-solving activities. At the end of each chapter, our computer will test your understanding of the content via 20 multiple-choice questions. These 20 questions are distributed evenly across each of the2 chapters, and you will need to answer each question correctly to move forward to the next chapter of the course.
